When life gives you bad bananas, make pancakes!
Browning bananas used to frustrate me. It was like watching my coins roll down a street drain. But now bananas breaking bad make me a little excited! Why you ask? Because I know they're now in the perfect state to create something sweet and delicious, like pancakes.
I don't know about you, but one of THEE hardest things to do when switching over to the clean eating life style was giving up good ol soft, white, fluffy, refined carb BREAD. And that includes pancakes.
But alas, there is an alternative for almost EVERYTHING.
Here's my take on the paleo flourless pancake. Enjoy!
You'll need:
- 2 browning bananas
- 2 eggs
- 1 tsp vanilla extract
- 2 tsp. baking powder
- a few dashes of cinnamon ( you can be as modest or liberal as you'd like)
- 1/2 tsp. nutmeg
- your choice of fruit for topping
- honey, jelly or maple syrup as desired
1. Peel your bananas and mash them with a fork in a mixing bowl. (This should be easy since they're so soft. Remember, they're browning right?)
2. Whisk your eggs in a separate bowl.
3. Mix your whisked eggs, vanilla, baking powder, cinnamon and nutmeg together in the bowl with your mashed bananas. The consistency should be somewhat similar to a traditional pancake batter.
4. Spray a skillet or griddle (I like using the griddle for these) with non-stick cooking spray and set to medium heat.
5. Pour batter to make small to medium sized pancakes. Do not attempt to make large pancakes. They are too hard to flip with these ingredients.
6. Cook about 60 secs on each side or until they're golden brown and the batter has solidified. Make sure you flip carefully. These are delicate and won't hold like a regular pancake.
7. Drizzle with sugarless maple syrup or raw honey or nothing at all! These are actually moist enough to eat without a dressing.
