Fluffy Omelette Muffins
This on-the-go breakfast treat is easy, tasty and healthy! And it will keep you full. I usually pre-make these the night before and simply warm up in the mornings. A girl's got a 9 to 5, and I'm not waking up at 5 am to cook before my hour and a half of traffic (Pray for me y'all).
You will need:
- muffin pan
- 6 eggs
- 1 cup fresh deli turkey (slice or dice)
- 1 cup chopped spinach (you can chop fresh baby spinach yourself)
- 1/2 cup mushrooms
- 1/2 cup shredded parmesan
- salt and pepper
** Honestly you can add whatever you like! Tomatoes, turkey bacon, etc.
Directions:
Crack eggs into large bowl, add desired salt and pepper
and whisk. Pour mixture into measuring cup.
Grease the 6 holes of the muffin tin you will be using.
Evenly distribute turkey, spinach and mushrooms to muffin pan holes. (It's okay if you have some left over).
Pour whisked eggs into holes almost to the top leaving about 1/4 inch of space.
Bake in the oven at 350 degrees for 20 to 25 minutes.
