Coconut Flour Waffles

If there were ever a breakfast food I could eat almost daily, it would be waffles! But of course, as delicious as they are, we all know that appetizing pattern of golden brown squares can be nothing but trouble for your mid-section and a possible assassin to someone with a gluten allergy.

So, in an effort to have the best of both worlds, I substituted the traditional All-Purpose flour that your grandma used for all of her delicious yet deadly carby eats for coconut flour. Coconut flour is rich in fiber and is considered a healthy fat, and for those intolerant of gluten, its free from wheat and other grains. It's also much lower on the glycemic index than grandma's flour.

Recipe

You'll need:

- 4 organic eggs

- a dash of salt

- 1/2 tsp cinnamon

- 1 tsp vanilla

- 2 tbsp coconut oil

- 3 tbsp water

- 1/4 cup coconut flour

- 1/2 cup cocnut milk

- 1/4 tsp baking soda

- 1/4 tsp baking powder

- 1/4 cup sweetener (optional. For those without dietary restrictions, feel free! Obviously if you're looking for low-sugar recipes, skip the sweetener. I used sugar).

Directions:

1. Beat eggs. Add sugar (if using), coconut flour, coconut milk, coconut oil, baking soda, baking powder, cinnamon and vanilla and salt.

2. Mix all ingredients well

3. Pour mixture into waffle maker according to your waffle maker's instructions.

4. Once done, remove your waffle(s) very carefully with a spatula. Coconut flour won't keep the consistency and structure of traditional waffles.

Suggested Toppings:

Honey, Organic Maple Syrup, Organic Jelly, Greek yogurt or whatever you'd like! Just know if you top with ice cream you just defeated the whole purpose of this substitute recipe.lol.
