Healthy Super Bowl Nacho Bites
Leading a healthy lifestyle but afraid of free work lunches, girls night out and Super Bowl parties? Fear no more. You will be completely satisfied and guilt-free with this chicken nacho recipe perfect for Super Bowl!
You'll need:
- 3 chicken breasts
- 1 cup pico de gallo
- 1 cup fresh guacamole
- shredded vegan cheese
- 1 bag blue corn chip tortilla cups
- salt and pepper
**Note: You can buy fresh guac and pico from the grocery store but I made my own.**
For guacamole:
- slice 3 ripe avocados in half
- dig out contents
- Mash with small spoon until creamy.
- Add a few dashes of lemon juice, squeeze with lime and sprinkle with garlic powder, chopped onion and tomato
For pico de gallo:
- Finely chop 1 red onion, 1 tomato ad several stems of cilantro. Mix all together and top with 1 squeezed lemon.
Directions:
- Slice chicken breasts into very small squares (About half the size of the tip of your pinky finger).
- Lightly Season with salt, pepper and garlic powder
- Cook on medium heat over skillet until done (shouldn't take more than 10 minutes)
- On a large plate, spread out single tortilla cups.
- Place a spoonful of chicken into a cup
- Follow with a tbsp of guac
- Follow with a tbsp of pico
- Sprinkle lightly with shredded vegan cheese
- Repeat until all cups are full. (Should yield about 30 tortilla cups)
