Vegan Banana Bread Muffins
Before the assumption is made I should clarify - I AM NOT A VEGAN. But that's not to say I don't appreciate a good, clean vegan recipe, especially if I want something sweet and tasty (aside from fruit) while still eating clean and feeling healthy. In other words, I want to eat like a food junkie without actually feeling like one.
I'm actually surprised at how well these turned out. Inspired by minimalistbaker, here's my take on vegan banana bread muffins!
Ingredients...
2 flax eggs
2 large bananas
1/2 cup dark brown sugar
1/4 cup coconut oil
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp sea salt
1 cup whole wheat flour
1/2 cup rolled oats
powdered sugar and peanut butter granola (optional)
Instructions
- Preheat oven to 375 degrees F
- mix eggs in a mixing bowl
-mash bananas and add to eggs in mixing bowl
- add dark brown sugar, baking soda and salt
- whisk for about 60 secs
- stir in vanilla and melted coconut oil and mix
- Add oats and flour and stir
- Fill the cups of a lightly greased muffin tin about 3/4 full
- Bake for 15 mins
- Allow to cool for about 30 minutes
- Lightly dust the top of muffins with powdered sugar and sprinkle with your choice of granola (if desired). I like the soft texture of the powdered sugar and the crunch of the granola. I chose peanut butter because it compliments banana flavor so well!
