Zucchini Parmesan Crisps
So I stumbled upon this recipe on Food Network's Instagram page (shout out to IG videos!. I was intrigued and thought, "This looks easy enough."
I also saw it as the perfect opportunity to have a healthy and filling snack versus scarfing down Doritos while waiting for dinner to finish baking in the oven. Yes, I have done this. You have too.
Yes, this recipe is very easy. BUT BE VERY CAREFUL with the execution. Otherwise, you can easily have burned or soggy not so crispy... crisps.
Here's the recipe below! Take note of the tips!
You'll need...
Cooking spray
2 medium zucchini
1 tablespoon olive oil
1/4 cup freshly grated Parmesan (3/4-ounce)
1/4 cup plain dry bread crumbs
1/8 teaspoon salt
black pepper
marinara sauce (optional for dipping)
Instructions...
Preheat oven to 450 degrees.
Spray baking sheet with cooking spray.
Cut zucchini into 1/4 thick slices. (DO NOT CUT THESE TOO THIN. THEY WILL BURN TO A CRISP IN THE OVEN)!
In a bowl, toss zucchini slices into olive oil. (DO NOT DRENCH TOO MUCH OIL OR ADD MORE THAN THE SUGGESTED AMOUNT. YOUR CRISPS WILL TURN OUT SOGGY).
In another bowl, mix the parmesan, bread crumbs, salt and pepper.
Dip slices individually into mixture making sure it is coated evenly onto slice and pressing down to ensure it sticks.
Neatly place each slice in a single layer onto baking sheet.
Bake about 20 to 25 minutes.
