Healthy Buffalo Chicken Lettuce Wraps
No food is more synonymous with Super Bowl than Buffalo Wings! And since we like to healthify things over here, I had to do a recipe that celebrates the tradition and the love of the Big Game Day's (and also one of my) most cherished foods.
These were so easy and I literally made them in less than 10 minutes! Best of all, everyone in my family absolutely loved them and I'm now I'm on my third batch for the weekend. True score! (insert corny joke here). Enjoy!
You'll need...
Butter lettuce
2 large chicken breasts
Celery
Fresh chives
Low fat blue cheese crumbles
Frank's Red Hot Buffalo Sauce
Low fat ranch dressing
Olive Oil (or butter if you're feeling more liberal and have the calories to spare)
Directions...
Dice chicken breasts into small cubes. Season lightly with salt and pepper. Melt oil or butter in skillet over stove top. Cook chicken on medium heat for 7 to 10 minutes or until fully cooked (avoid drying the chicken out). Add a 1/4 cup of buffalo sauce and sprinkle with garlic salt. Add more for a saucier batch of chicken. Toss chicken breasts in sauce over skillet on low heat for about 30 seconds.
Remove from heat.
Add spoonfuls of chicken breasts onto double-layered butter lettuce leaves. (one on top of the other). Add sprinkles of chopped celery, blue cheese crumbles and chives. Drizzle lightly with ranch dressing. Serve and enjoy!
