Mini Whole Wheat Pancakes
Who doesn't love pancakes? I'm not sure I know of anyone who falls into this category but those who do probably also don't like cute puppies, giggling babies and sunlight.
We all love pancakes, but most of us don't love the guilt that comes along with eating them especially during our get it right get it tight for the summer transformation process. A Sunday morning of heaping hot cakes from the local Cracker Barrel can set you back a week and some change! (God those pancakes are literally the best on earth). Anywho, this recipe helps take some of the guilt out of eating America's favorite breakfast carb. Try a couple of these mini whole wheat pancakes with little sugar and no butter for a nice pancake fix when you've hit a wall of misery in your weight loss pursuit but need a fix!
You'll need...
- 1 cup whole wheat flour
- 3 tsp sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- a pinch of salt
- 1 cup whole milk
- 1 egg
- 2 tbsp melted coconut oil
Directions...
Whisk flour, sugar, baking powder, baking soda and salt together in a large bowl.
In a separate bowl, whisk milk, egg and melted oil.
Mix wet and dry ingredients together ( be careful to not over mix. The mixture should still be lumpy.
Pout small circles of batter over a hot griddle (375 degrees). Cook for a few minutes on each side and enjoy!
